Peanut Butter, Chocolate & Caramel Overnight Weet-Bix

Ingredients

Base Layer:
2 Weet-Bix, crushed
1/2 cup milk of choice, water, or a both

Yoghurt Layer:
160g salted caramel yogurt

Caramel-Peanut Butter Layer:
2 teaspoons Darryl's Peanut Butter
2 teaspoons maple syrup (sugar free or regular)
Pinch of cinnamon
1-2 teaspoons of milk (as needed, depending on desired consistency)

Chocolate Layer:
10g of chocolate of choice (milk, dark, or sugar-free)
1-2 teaspoons of milk

To Garnish (Optional):
Crushed peanuts

Method

1.  Crush the Weet-Bix and place into a jar or container.
Pour over the milk (or milk/water mix) until fully soaked. Press down gently to form an even layer.
2. Spoon the salted caramel yoghurt over the Weet-Bix and spread evenly.
3. In a small bowl, mix Darryl's Peanut Butter, maple syrup, cinnamon, and milk. Start with 1 teaspoon of milk and add more as needed until the mixture is smooth and pourable. Spread evenly over the yoghurt layer.
4. Melt the chocolate in the microwave in short bursts until fully melted.
Stir in the milk to create a smooth, glossy ganache. Pour over the peanut butter layer.
5. Sprinkle with crushed peanuts if using. Cover and refrigerate for at least 4 hours, preferably overnight.
Tips & Variations
  • Texture control: If you like a softer base, add a little extra milk to the Weet-Bix layer.
  • Protein boost: Add a scoop of vanilla or caramel protein powder to the yoghurt layer
  • Extra indulgent: Add a few caramel chips or chopped chocolate between layers.
  • Meal prep friendly: Keeps well in the fridge for up to 2 days.
